Bottle Theory is a craft beer taproom, restaurant, and retail bottle shop at 542 Spring Road in Elmhurst. They carry over 500 varieties of craft beer and wine from around 200 brewers, with 20 rotating draft lines and a wraparound retail fridge that holds 540 individual cans. The kitchen serves a taqueria-inspired menu with elevated tacos, shareable plates, and creative bar food. They partner closely with top Illinois breweries like Hop Butcher for the World, Maplewood, Revolution, Dovetail, Phase Three, and Riverlands, and have even collaborated on exclusive brews.
Origin Story
Bottle Theory is a passion project from three friends who share a deep love for craft beer and a dream of building something meaningful in their community. One of the founders spent 18 years in the food and beverage industry and a full decade developing the concept before the pieces came together.
When the trio identified the space on Spring Road, they saw an opportunity to bring something new to the western suburbs, not just another bar but a hybrid concept fusing a curated retail bottle shop with a full taproom and scratch kitchen. Bottle Theory opened in 2022 as the group’s flagship, with ambitions for additional locations across the Chicago area.
